Butternut Squash & Cranberry Quinoa Bowl Recipe
Serves 1
Ingredients:
1 cup roasted butternut squash
2 tbsp dried cranberries
1 cup shredded kale
1 cup cooked quinoa
¼ Lemon chia dressing
For Lemon chia dressing:
1 lemon
1 tsp chia seeds
1 garlic clove
1/4 cup extra virgin olive oil
2 tbsp honey
salt and pepper to taste
Instructions:
1. Prepare the Lemon chia dressing first. Using a microplane, grate the peeled garlic clove into a bowl. Zest the lemon and then juice the lemon into the same bowl. Add the chia seeds, extra virgin olive oil, honey and salt and pepper. Whisk until smooth.
2. Marinate the shredded kale in half of the Lemon chia dressing.
3. Layer the bowl from bottom up with cooked quinoa, shredded kale, and roasted butternut squash.
4. Sprinkle the dried cranberries on top and then drizzle on the remaining dressing.
Tahini Maple Ginger Dressing Recipe
3 tbsp tahini
1 tbsp maple syrup
½ orange
1 tsp grated ginger
1 tsp lemon zest
½ lemon
cayenne pepper to taste
salt to taste
Instructions:
1. Zest the orange and prepare the grated ginger.
2. Juice the lemon and orange into a bowl. Add the orange zest and ginger.
3. In the bowl, add the tahini, maple syrup, salt and cayenne pepper. Whisk until smooth.
Roasted Sweet Potato Fries Recipe
Serves 2
3 sweet potatoes
1 ½ tbsp olive oil
salt and pepper to taste
Instructions:
1. Preheat the oven to 400F or 205C. Chop the sweet potatoes into large wedges.
2. Coat with olive oil and sprinkle with salt and pepper. Bake for 40 to 45 minutes, flipping them halfway through. Serve hot and enjoy!
